FROM GRANDMA RITA’S KITCHEN

A little of Rita at our table

My grandmother Rita Tavarez made and sold tamales in Fort Stockton, Texas, beginning in the 1950s. She cooked by feel—a pinch of this, a handful of that—and taught me at her side.

These are family recipes worth passing on: good pork, red chile, warm tortillas, and the kind of cooking that brings everyone into the kitchen.

Family recipes shared by her grandson, Ed Rangel.

Rita’s family favorites sit alongside a growing collection of northern Mexican dishes, thoughtfully adapted in English. The newer pages identify the changes and research behind each recipe.

New recipes are researched home-kitchen adaptations, not kitchen-tested formulas. Each page includes its editing notes and sources. Regional dishes in the collection are distinguished from Rita’s documented family recipes.
